Here in Hawaii we eat and sell Marlin. Once we have a Marlin on board we bleed the fish then cut out the gills and the guts and scrape the blood line off the inside of the body cavity. We also take off the head and the tail and submerge it in a salt and ice brine to get the fish temp down below 40 degrees.
